usually cichlid eggs take about 3 days to hatch. if they are not fertile they will turn white in about 2 days. if they are fertile they will turn a sort of brown/amber color and you will be able to see the embryo in it after about 2 days.

I dont know a lot about Convicts in particular but I know that they naturally gaurd their eggs all the time, so I wouldn't use that as an indicator of when the eggs will hatch. What colour are they now?

Convicts will guard the eggs regaurdless of them hatching, They will even guard their spawning area.
