Oscars can be quite picky about their food, and sometimes they will not eat new food when it is introduced to them. (They will get hungry evenutally and eat what you are feeding them)
When my O was very small I gave him some bloodworm for the first time, after that he wasn't interested in pellets for days later, until he realised that he wasn't going to get bloodworm all the time, he soon began eating the pellets again.
Also, if I feed my O when he's not hungry, he will chew the pellets up and spit them out. It's nothing to worry about, he's just going through the motions of eating.....without swallowing :)
